Delicious pumpkin spice cheesecake bars with a creamy filling and a graham cracker crust.
Ingredients

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup pumpkin puree
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons pumpkin pie spice
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter.
- Press the mixture into the bottom of a baking dish.
- In another bowl, beat cream cheese until smooth.
- Add pumpkin puree, sugar, eggs, vanilla, pumpkin pie spice, and salt. Mix well.
- Pour the cream cheese mixture over the crust.
- Bake for 30-35 minutes until set.
- Let cool before cutting into bars.
Notes
- Store in the refrigerator.
- Best served chilled.
- Add whipped cream on top for extra flavor.
