Description

Delicious pumpkin pie flavored macarons.


Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice
  • 1/4 cup pumpkin puree
  • 1/2 cup butter, softened
  • 1 cup cream cheese
  • 1 cup powdered sugar (for filling)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a bowl, mix almond flour and powdered sugar.
  3. Whip egg whites until soft peaks form.
  4. Gradually add granulated sugar and whip until stiff peaks form.
  5. Fold in the dry ingredients and pumpkin pie spice.
  6. Pipe onto a baking sheet lined with parchment paper.
  7. Let sit for 30 minutes to form a skin.
  8. Bake for 15-20 minutes.
  9. Let cool before filling.
  10. Mix cream cheese, butter, powdered sugar, and pumpkin puree for the filling.
  11. Pipe filling onto half of the macarons and sandwich with the other half.
