Delicious pumpkin pie flavored macarons.
Ingredients

- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp pumpkin pie spice
- 1/4 cup pumpkin puree
- 1/2 cup butter, softened
- 1 cup cream cheese
- 1 cup powdered sugar (for filling)
Instructions
- Preheat your oven to 300°F (150°C).
- In a bowl, mix almond flour and powdered sugar.
- Whip egg whites until soft peaks form.
- Gradually add granulated sugar and whip until stiff peaks form.
- Fold in the dry ingredients and pumpkin pie spice.
- Pipe onto a baking sheet lined with parchment paper.
- Let sit for 30 minutes to form a skin.
- Bake for 15-20 minutes.
- Let cool before filling.
- Mix cream cheese, butter, powdered sugar, and pumpkin puree for the filling.
- Pipe filling onto half of the macarons and sandwich with the other half.
Notes
- Use fresh pumpkin puree for best flavor.
- Store macarons in an airtight container.
- Let flavors meld for a day before serving.
