Ingredients

- 2 cups cooked pasta
- 1 cup pumpkin puree
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- In a large bowl, combine the cooked pasta and pumpkin puree.
- Add cherry tomatoes, red onion, and feta cheese.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the pasta salad and mix well.
- Chill for at least 30 minutes before serving.
