Ingredients

  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 4 oz cream cheese, softened
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, combine pumpkin puree, vegetable oil, eggs, sugar, and brown sugar.
  4. Gradually add the dry ingredients to the wet mixture.
  5. Spoon the batter into muffin tins, filling each cup halfway.
  6. In a separate bowl, mix cream cheese and vanilla extract until smooth.
  7. Add a dollop of cream cheese mixture on top of each muffin.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
