Ingredients

- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 4 oz cream cheese, softened
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, combine pumpkin puree, vegetable oil, eggs, sugar, and brown sugar.
- Gradually add the dry ingredients to the wet mixture.
- Spoon the batter into muffin tins, filling each cup halfway.
- In a separate bowl, mix cream cheese and vanilla extract until smooth.
- Add a dollop of cream cheese mixture on top of each muffin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
Notes
- Store leftovers in an airtight container.
- These muffins freeze well.
