Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup maple syrup

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, mix flour, baking soda, salt, and spices.
  3. In another bowl, combine sugars, pumpkin, oil, eggs, and vanilla.
  4. Blend wet and dry ingredients until smooth.
  5. In a separate bowl, mix cream cheese and maple syrup until smooth.
  6. Pour half the batter into a greased loaf pan.
  7. Spoon cream cheese mixture over the batter.
  8. Top with remaining batter.
  9. Bake for 60 minutes or until a toothpick comes out clean.
  10. Let cool before slicing.
