Delicious pumpkin bars topped with creamy cheese frosting.

- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup vegetable oil
- 1 cup canned pumpkin puree
- 2 large eggs
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, combine oil, pumpkin puree, eggs, and vanilla extract.
- Mix the dry ingredients into the wet ingredients.
- Pour the batter into a greased baking pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the bars cool completely.
- For the frosting, beat cream cheese and butter until smooth.
- Add powdered sugar and vanilla extract, mix until creamy.
- Spread the frosting over the cooled pumpkin bars.
Notes
- Store leftovers in the refrigerator.
- Bars can be made a day in advance.
- Feel free to add nuts or chocolate chips to the batter.
