  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, combine oil, pumpkin puree, eggs, and vanilla extract.
  4. Mix the dry ingredients into the wet ingredients.
  5. Pour the batter into a greased baking pan.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let the bars cool completely.
  8. For the frosting, beat cream cheese and butter until smooth.
  9. Add powdered sugar and vanilla extract, mix until creamy.
  10. Spread the frosting over the cooled pumpkin bars.
