Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Rub the roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Place the roast bone-side down in a roasting pan.
  4. Roast in the preheated oven for 15 minutes.
  5. Reduce the temperature to 325°F (163°C) and continue to roast for 1.5 to 2 hours, or until the internal temperature reaches your desired doneness.
  6. Let the roast rest for 20 minutes before slicing and serving.
