Ingredients

  • 1 lb chicken breast
  • 1 cup orzo pasta
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Set the pressure cooker to sauté mode. Add olive oil.
  2. Add onion, carrots, and celery. Sauté until softened.
  3. Add garlic and cook for 1 minute.
  4. Add chicken breast, broth, thyme, oregano, salt, and pepper.
  5. Close the lid and set the pressure cooker to high for 10 minutes.
  6. Release the pressure and remove the chicken. Shred it and return to the pot.
  7. Add orzo and cook on sauté for 5 minutes until tender.
  8. Garnish with fresh parsley before serving.

Notes

  • Adjust seasoning as needed.
  • Use rotisserie chicken for quicker prep.
  • Store leftovers in the refrigerator for up to 3 days.
