A flavorful and hearty potsticker soup loaded with vegetables and dumplings.
Ingredients

- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, sliced
- 1 bell pepper, diced
- 4 cups chicken or vegetable broth
- 1 package frozen potstickers
- 2 cups bok choy, chopped
- 2 green onions, sliced
- 1 tablespoon soy sauce
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in carrot and bell pepper, cook for 5 minutes.
- Pour in broth and bring to a boil.
- Add frozen potstickers and cook according to package instructions.
- Add bok choy and soy sauce, simmer for 2-3 minutes.
- Season with salt and pepper.
- Garnish with green onions before serving.

- Use any frozen dumplings you prefer.
- Adjust vegetables based on your taste.
- Can be made vegetarian by using vegetable broth.
