Ingredients

  • 2 cups grated potatoes
  • 1 cup grated sweet potatoes
  • 1 small onion, grated
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying

Instructions

  1. Grate the potatoes and sweet potatoes.
  2. Grate the onion and add to the potatoes.
  3. In a bowl, combine potatoes, sweet potatoes, onion, eggs, flour, salt, and pepper.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the mixture into the hot oil.
  6. Fry until golden brown on both sides.
  7. Drain on paper towels before serving.

  • Serve with applesauce or sour cream.
