Description
Crispy and delicious potato and sweet potato latkes.
Ingredients

- 2 cups grated potatoes
- 1 cup grated sweet potatoes
- 1 small onion, grated
- 2 eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for frying
Instructions
- Grate the potatoes and sweet potatoes.
- Grate the onion and add to the potatoes.
- In a bowl, combine potatoes, sweet potatoes, onion, eggs, flour, salt, and pepper.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil.
- Fry until golden brown on both sides.
- Drain on paper towels before serving.
Notes
- Serve with applesauce or sour cream.
- Make sure the oil is hot before frying.
- Use a box grater for even grating.
