Ingredients
- Potatoes: 4 large (about 1.5 kg), thinly sliced
- Pizza sauce: 2 cups (about 480 ml)
- Mozzarella cheese: 2 cups, shredded (about 200 g)
- Pepperoni: 1 cup, sliced (about 100 g)
- Bell peppers: 1 cup, diced (any color)
- Onions: 1 medium, diced
- Italian seasoning: 2 teaspoons
- Olive oil: 2 tablespoons
- Salt and pepper: to taste
Instructions
- Wash and peel the potatoes, then slice them thinly, about 1/8 inch thick. Rinse the slices in cold water and pat them dry.
- In a large skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, sauté for 5-7 minutes until translucent, and season with salt, pepper, and Italian seasoning.
- In a greased 9×13 inch baking dish, layer half of the potato slices, followed by half of the pizza sauce, sautéed vegetables, pepperoni, and mozzarella cheese. Repeat the layering with the remaining ingredients.
- Cover the dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 30 minutes. Remove the foil and bake for an additional 20-25 minutes until golden brown and tender.
- Let the casserole cool for about 10 minutes before serving. Enjoy warm, paired with a fresh salad.
