- 1 lb chicken breast, diced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 avocado, sliced
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat.
- Add diced chicken and cook until browned.
- Stir in cumin, chili powder, salt, and pepper.
- Add black beans, corn, and salsa to the pot.
- Mix in the cooked rice and stir until heated through.
- Serve in bowls topped with avocado, cheese, and cilantro.
