- 4 large portobello mushrooms, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 small tortillas
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced onions and peppers. Sauté until softened.
- Add portobello mushrooms and spices. Cook until mushrooms are tender.
- Warm tortillas in a separate pan.
- Fill tortillas with the mushroom mixture.
- Garnish with fresh cilantro and serve.
