Ingredients

- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 lemon, halved
- Fresh herbs (rosemary or thyme)
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- Rub the chicken with olive oil, salt, pepper, garlic powder, onion powder, and paprika.
- Stuff the chicken cavity with lemon halves and fresh herbs.
- Place the chicken in a roasting pan.
- Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving.
Notes
- Use a meat thermometer for accurate cooking.
- Allow the chicken to come to room temperature before cooking.
- Serve with your choice of sides.
