Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels.
  3. Rub the chicken with olive oil, salt, pepper, garlic powder, onion powder, and paprika.
  4. Stuff the chicken cavity with lemon halves and fresh herbs.
  5. Place the chicken in a roasting pan.
  6. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10 minutes before carving.
