Ingredients

- 4 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- Salt to taste
- Pepper to taste
- Fresh chives for garnish
Instructions
- Bring a pot of water to a simmer.
- Crack each egg into a small cup and gently slide into the water.
- Poach eggs for about 3-4 minutes until whites are set.
- Remove eggs with a slotted spoon and let cool.
- In a bowl, mix mayonnaise, mustard, lemon juice, salt, and pepper.
- Carefully peel off the egg whites and fill with the mixture.
- Garnish with chives.
