- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 can (20 oz) pineapple slices, drained
- 1 cup maraschino cherries
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup buttermilk
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bundt pan, melt butter and sprinkle brown sugar evenly over it.
- Arrange pineapple slices and cherries in the bottom of the pan.
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and granulated sugar until fluffy.
- Add eggs, buttermilk, and vanilla to the butter mixture and mix well.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Pour batter over the pineapple and cherries in the bundt pan.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let it cool for 10 minutes before inverting onto a serving plate.
Notes
- Use fresh pineapple for a more vibrant flavor.
- Store leftovers in an airtight container.
- Serve with whipped cream for added sweetness.
