Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. In another bowl, combine flour, baking powder, baking soda, and salt.
  7. Gradually add the dry ingredients to the butter mixture, alternating with buttermilk.
  8. Fold in the crushed pineapple and shredded coconut.
  9. Pour the batter evenly into the prepared pans.
  10. Bake for 25-30 minutes or until a toothpick comes out clean.
  11. Let cakes cool in pans for 10 minutes before transferring to wire racks.
