Instructions
- Drain the crushed pineapple well.
- In a bowl, mix cream cheese, powdered sugar, and vanilla extract.
- Add the drained pineapple and mix until combined.
- Form the mixture into small balls.
- Roll each ball in shredded coconut and chopped pecans.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- Make sure the pineapple is well drained to avoid sogginess.
- You can use walnuts instead of pecans if preferred.
