Description
A classic picnic-style macaroni salad that’s easy to make and full of flavor.
Ingredients

- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 cup celery, diced
- 1 cup bell pepper, diced
- 1/2 cup red onion, diced
- 1 cup sweet pickles, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Cook the macaroni according to package instructions. Drain and let cool.
- In a large bowl, mix mayonnaise and Dijon mustard.
- Add the cooled macaroni, celery, bell pepper, red onion, sweet pickles, salt, and pepper. Stir to combine.
- Fold in the parsley.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For extra flavor, add cooked bacon or hard-boiled eggs.
- Adjust the vegetables based on your preference.
- Store leftovers in an airtight container in the fridge.
