Ingredients

- 1 pound shrimp, peeled and deveined
- 1 cup white vinegar
- 1/2 cup water
- 1/4 cup sugar
- 1 tablespoon salt
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 teaspoon black peppercorns
- 1 bay leaf
Instructions
- Boil water in a pot and cook shrimp for 2-3 minutes until pink.
- Drain and rinse shrimp under cold water.
- In a saucepan, combine vinegar, water, sugar, salt, garlic, red pepper flakes, peppercorns, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 5 minutes.
- Pour the pickling liquid over the shrimp in a jar.
- Let it cool, then seal the jar and refrigerate for at least 24 hours.
Notes
- Serve with crackers or on a salad.
- Can be stored in the fridge for up to a week.
