- 4 bell peppers
- 1 lb flank steak, thinly sliced
- 1 medium onion, diced
- 1 cup mushrooms, sliced
- 1 cup provolone cheese, shredded
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- Heat olive oil in a skillet over medium heat.
- Add onions and mushrooms, sauté until soft.
- Add flank steak, cook until browned.
- Season with salt and pepper.
- Stuff the mixture into each bell pepper.
- Top with provolone cheese.
- Place stuffed peppers in a baking dish and cover with foil.
- Bake for 25-30 minutes, then remove foil and bake for an additional 10 minutes.
