Ingredients

- 2 cups cooked cauliflower rice
- 2 chicken breasts, diced
- 1/2 cup pesto sauce
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced chicken, season with salt and pepper.
- Cook chicken until browned and cooked through, about 5-7 minutes.
- Stir in pesto sauce and cook for 2 more minutes.
- Serve over cooked cauliflower rice.
- Top with grated Parmesan cheese.
