Ingredients

  • 2 cups of white rice
  • 1 whole chicken, cut into pieces
  • 4 tablespoons of olive oil
  • 1 cup of chicken broth
  • 1 cup of cilantro
  • 1 jalapeno, seeded
  • 2 cloves of garlic
  • 1 lime, juiced
  • Salt to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add the chicken pieces and season with salt. Cook until browned.
  4. Remove chicken and set aside. In the same pot, add the rice and stir for 2 minutes.
  5. Add chicken broth and bring to a boil.
  6. Add the chicken back to the pot, cover, and simmer for 20 minutes.
  7. In a blender, combine cilantro, jalapeno, garlic, lime juice, and 2 tablespoons of olive oil. Blend until smooth.
  8. Serve the chicken over rice and drizzle with green sauce.

Notes

  • Adjust the spiciness by adding more or less jalapeno.
  • Let the rice rest for 5 minutes after cooking before serving.
  • Green sauce can be made ahead of time and stored in the fridge.
