  • Cocoa powder: 1/2 cup (50 g)
  • Baking soda: 1 teaspoon
  • Salt: 1/4 teaspoon
  • Unsalted butter: 1 cup (226 g), softened
  • Granulated sugar: 1 cup (200 g)
  • Brown sugar: 1/2 cup (100 g), packed
  • Eggs: 2 large
  • Vanilla extract: 1 teaspoon
  • Peppermint extract: 1/2 teaspoon
  • White chocolate: 1 cup (170 g), chopped or chips
  • Crushed peppermint candies: 1/2 cup (about 60 g)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking station.
  2. Whisk together the dry ingredients in a medium bowl and set aside.
  3. Cream the softened butter with granulated and brown sugars until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla and peppermint extracts.
  5. Drop rounded balls of dough onto a prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 10-12 minutes until edges are set and centers are soft.
  7. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  8. Melt white chocolate in a microwave-safe bowl and drizzle over cooled cookies.
  9. Sprinkle crushed peppermint candies over the melted chocolate.
  10. Let the cookies sit at room temperature for 30 minutes to allow the chocolate to harden.

Notes

  • Store cookies in an airtight container at room temperature for up to a week.
  • For a stronger peppermint flavor, mix in more crushed candies into the dough.
