A delicious pecan upside down cake with a caramelized topping.

- 1 cup pecans
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, melt the butter and brown sugar over low heat until smooth.
- Pour the mixture into a greased 9-inch round cake pan.
- Arrange the pecans in a single layer over the caramel mixture.
- In a bowl, beat together the granulated sugar, eggs, and vanilla.
- In another bowl, whisk the flour, baking powder, baking soda, and salt.
- Alternately add the dry ingredients and buttermilk to the egg mixture.
- Pour the batter over the pecans in the cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool for 10 minutes, then invert onto a serving plate.
Notes
- Store leftovers in an airtight container.
- Serve warm or at room temperature.
