A quick and easy peanut noodle stir fry packed with flavor.
Ingredients

- 8 oz rice noodles
- 2 tablespoons peanut butter
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- Cook the rice noodles according to package instructions.
- In a bowl, mix peanut butter, soy sauce, and sesame oil.
- Heat a pan over medium heat and add garlic and ginger.
- Add bell peppers and broccoli, stir-fry for 5 minutes.
- Add cooked noodles and peanut sauce, toss to combine.
- Garnish with green onions and sesame seeds before serving.
Notes
- Adjust the spice level by adding chili flakes.
- Use any vegetables you prefer.
- Store leftovers in the fridge for up to 3 days.
