Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 36 mini peanut butter cups, unwrapped
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together butter, peanut butter, granulated sugar, and brown sugar.
  3. Add eggs and vanilla, mix well.
  4. In another bowl, combine flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Drop dough by tablespoons onto a baking sheet.
  7. Bake for 10-12 minutes until edges are golden.
  8. Remove from oven and press a mini peanut butter cup into the center of each cookie.
  9. Cool on a wire rack.
