Ingredients

  • Eggs: 3 large
  • Peanut butter: 240 grams (1 cup), creamy
  • Heavy cream: 240 ml (1 cup)
  • Chocolate cookies: 200 grams (about 2 cups, crushed)
  • Butter: 100 grams (1/2 cup), melted
  • Mini peanut butter cups: 150 grams (about 1 cup), for topping
  • Chocolate ganache: for drizzling (optional)

Instructions

  1. Preheat your oven to 175°C (350°F). Prepare the crust by mixing crushed chocolate cookies with melted butter and pressing into a springform pan. Bake for 10 minutes and let cool.
  2. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add granulated sugar, mixing well.
  3. Add eggs one at a time, mixing on low speed after each addition. Be careful not to overmix.
  4. Incorporate creamy peanut butter and blend until smooth. Pour in heavy cream and mix until well combined.
  5. Pour the cheesecake filling over the cooled crust and spread evenly. Bake for 50-60 minutes until edges are set with a slight jiggle in the center.
