Ingredients
- Cream cheese: 450 grams (16 oz), softened
- Granulated sugar: 200 grams (1 cup)
- Eggs: 3 large
- Peanut butter: 240 grams (1 cup), creamy
- Heavy cream: 240 ml (1 cup)
- Chocolate cookies: 200 grams (about 2 cups, crushed)
- Butter: 100 grams (1/2 cup), melted
- Mini peanut butter cups: 150 grams (about 1 cup), for topping
- Chocolate ganache: for drizzling (optional)
Instructions
- Preheat your oven to 175°C (350°F). Prepare the crust by mixing crushed chocolate cookies with melted butter and pressing into a springform pan. Bake for 10 minutes and let cool.
- In a large mixing bowl, beat softened cream cheese until smooth. Gradually add granulated sugar, mixing well.
- Add eggs one at a time, mixing on low speed after each addition. Be careful not to overmix.
- Incorporate creamy peanut butter and blend until smooth. Pour in heavy cream and mix until well combined.
- Pour the cheesecake filling over the cooled crust and spread evenly. Bake for 50-60 minutes until edges are set with a slight jiggle in the center.
- Turn off the oven, crack the door, and let the cheesecake cool for 1 hour. Then refrigerate for at least 4 hours or overnight.
- Before serving, top with mini peanut butter cups and drizzle with chocolate ganache if desired.
