A delicious dessert combining the flavors of peach cobbler and cheesecake in bar form.
Ingredients

- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh peaches, chopped
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a greased baking pan.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs and vanilla, mixing until combined.
- Pour the cheesecake mixture over the crust in the pan.
- In a separate bowl, combine peaches, brown sugar, and cinnamon.
- Spread the peach mixture over the cheesecake layer.
- Bake for 40-45 minutes until set.
- Let cool, then refrigerate for at least 2 hours before cutting into bars.
Notes
- Use ripe peaches for best flavor.
- Store leftovers in the refrigerator.
- Can substitute canned peaches if fresh are not available.
