- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup peach puree
- 1/2 cup sparkling wine
- 1 tsp baking powder

- 1 tsp vanilla extract
- 1 cup powdered sugar (for frosting)
- 2 tbsp sparkling wine (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs, peach puree, and vanilla extract. Mix until combined.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the sparkling wine.
- Fill each cupcake liner with batter, about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the cupcakes cool completely.
- For the frosting, beat the powdered sugar with sparkling wine until smooth.
- Frost the cooled cupcakes and enjoy.
