  • 1/2 cup unsalted butter, softened

  • 1/2 cup peach puree
  • 1/2 cup sparkling wine
  • 1 tsp baking powder

  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for frosting)
  • 2 tbsp sparkling wine (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, peach puree, and vanilla extract. Mix until combined.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the sparkling wine.
  6. Fill each cupcake liner with batter, about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the cupcakes cool completely.
  9. For the frosting, beat the powdered sugar with sparkling wine until smooth.
  10. Frost the cooled cupcakes and enjoy.
