Description
A refreshing pasta salad that combines the sweetness of watermelon with the tanginess of feta.
Ingredients

- 2 cups cooked pasta
- 2 cups diced watermelon
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- Drain and rinse the pasta under cold water.
- In a large bowl, combine the cooked pasta, diced watermelon, feta cheese, and mint.
- In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
