Description
A fresh and flavorful pasta salad made with vegan ranch dressing.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, diced
- 1/2 cup corn, canned or frozen
- 1/2 cup vegan ranch dressing
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- Drain and rinse the pasta under cold water.
- In a large bowl, combine the pasta, tomatoes, cucumber, bell pepper, red onion, and corn.
- Add the vegan ranch dressing and mix well.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Use any pasta shape you prefer.
- Add more vegetables as desired.
- This salad can be stored in the refrigerator for up to 3 days.
