Description

A fresh and flavorful pasta salad made with vegan ranch dressing.


Ingredients

  • 8 oz pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup corn, canned or frozen
  • 1/2 cup vegan ranch dressing
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. Drain and rinse the pasta under cold water.
  3. In a large bowl, combine the pasta, tomatoes, cucumber, bell pepper, red onion, and corn.
  4. Add the vegan ranch dressing and mix well.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.
