Description
A refreshing pasta salad featuring heirloom tomatoes.
Ingredients

- 2 cups pasta
- 1 cup heirloom tomatoes, chopped
- 1/2 cup cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and cool.
- In a large bowl, combine pasta, tomatoes, cucumber, onion, and basil.
- In a small bowl, whisk together olive oil and balsamic vinegar.
- Pour dressing over pasta salad and toss to combine.
- Season with salt and pepper.
- Chill for 30 minutes before serving.

- Use any type of pasta for this recipe.
- Feel free to add other vegetables.
- This salad keeps well in the fridge for up to three days.
