Description
A refreshing pasta salad with a creamy avocado cilantro dressing.
Ingredients

- 8 oz pasta
- 1 ripe avocado
- 1/4 cup fresh cilantro
- 2 tbsp lime juice
- 1/4 cup olive oil
- 1/2 cup cherry tomatoes, halved
- 1/2 cup corn, cooked
- 1/4 cup red onion, diced
- Salt to taste
- Pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a blender, combine avocado, cilantro, lime juice, and olive oil. Blend until smooth.
- In a large bowl, mix together the cooked pasta, cherry tomatoes, corn, and red onion.
- Pour the avocado dressing over the pasta mixture and toss to coat.
- Season with salt and pepper to taste.
- Chill in the refrigerator for 30 minutes before serving.

- Use whole grain pasta for a healthier option.
- Customize with your favorite vegetables.
- Best served fresh but can be stored in the refrigerator for up to 2 days.
