Description
A refreshing parsley salad that you will want to make repeatedly.
Ingredients

- 1 bunch of fresh parsley, chopped
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Wash and chop the parsley.
- Dice the cucumber and halve the cherry tomatoes.
- Finely chop the red onion.
- In a large bowl, combine parsley, cucumber, tomatoes, and onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or chill for 30 minutes before serving.
Notes
- This salad can be made in advance and stored in the refrigerator.
- Add feta cheese for extra flavor.
- Adjust dressing according to your taste.
