Description

A flavorful dish featuring pan-seared cod in a white wine, tomato, and basil sauce.


Ingredients

  • 4 cod fillets
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup white wine
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • 1 lemon, juiced

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season cod fillets with salt and pepper.
  3. Place cod in the pan and sear for 3-4 minutes on each side.
  4. Remove cod and set aside.
  5. Add garlic and cherry tomatoes to the pan, cooking until tomatoes soften.
  6. Pour in white wine and lemon juice, simmering for 5 minutes.
  7. Add chopped basil and return cod to the pan.
  8. Cook for an additional 2-3 minutes until cod is cooked through.
