A delicious paleo-friendly Thanksgiving meal.
Ingredients

- 1 whole turkey (12–14 lbs)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 cups fresh herbs (rosemary, thyme, sage)
- 4 cups cauliflower (riced)
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup onion (diced)
- 1/2 cup chicken broth
Instructions
- Preheat your oven to 325°F (165°C).
- Rub the turkey with olive oil, salt, pepper, garlic powder, and onion powder.
- Stuff the turkey with fresh herbs.
- Place the turkey in a roasting pan and roast for 3-4 hours.
- In a skillet, sauté carrots, celery, and onion until tender.
- Add riced cauliflower and chicken broth to the skillet, cooking until heated through.
- Let the turkey rest for 20 minutes before carving.
- Serve turkey with cauliflower stuffing on the side.

- Choose a pasture-raised turkey for better flavor.
- Adjust seasoning according to your taste.
- Make sure to check the turkey’s internal temperature.
