A healthy twist on classic deviled eggs using Paleo ingredients.
Ingredients

- 6 large eggs
- 1 avocado
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt to taste
- Black pepper to taste
- Paprika for garnish
Instructions
- Boil the eggs for 10 minutes and let them cool.
- Peel the eggs and cut them in half lengthwise.
- Remove the yolks and place them in a bowl.
- Add avocado, Dijon mustard, lemon juice, salt, and pepper to the yolks.
- Mash the mixture until smooth.
- Fill the egg whites with the avocado mixture.
- Sprinkle paprika on top for garnish.
Notes
- Store leftovers in the refrigerator.
- Can substitute avocado with mayonnaise if not following strict Paleo.
- Adjust seasoning to your taste.
