Description

A healthy twist on classic deviled eggs using Paleo ingredients.


Ingredients

  • 6 large eggs
  • 1 avocado
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • Paprika for garnish

Instructions

  1. Boil the eggs for 10 minutes and let them cool.
  2. Peel the eggs and cut them in half lengthwise.
  3. Remove the yolks and place them in a bowl.
  4. Add avocado, Dijon mustard, lemon juice, salt, and pepper to the yolks.
  5. Mash the mixture until smooth.
  6. Fill the egg whites with the avocado mixture.
  7. Sprinkle paprika on top for garnish.

Notes

  • Store leftovers in the refrigerator.
  • Can substitute avocado with mayonnaise if not following strict Paleo.
