Ingredients

- 2 tbsp vegetable oil
- 1 egg
- 1 cup shrimp, peeled and deveined
- 1 cup bean sprouts
- 2 green onions, chopped
- 3 tbsp fish sauce
- 1 tbsp sugar
- 1 tbsp tamarind paste
- 1/4 cup crushed peanuts
- Lime wedges for serving
Instructions
- Soak rice noodles in warm water for 30 minutes.
- Heat oil in a pan over medium heat.
- Add shrimp and cook until pink.
- Push shrimp to one side, crack an egg into the pan, and scramble.
- Add soaked noodles, fish sauce, sugar, and tamarind paste.
- Toss to combine and heat through.
- Stir in bean sprouts and green onions.
- Serve topped with crushed peanuts and lime wedges.
