Oven fried chicken served with homemade coleslaw.
Ingredients

- 4 chicken thighs
- 1 cup buttermilk
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- 2 cups green cabbage, shredded
- 1 cup carrots, grated
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Marinate chicken in buttermilk for at least 2 hours.
- Mix breadcrumbs with garlic powder, onion powder, paprika, salt, and pepper.
- Coat the marinated chicken in the breadcrumb mixture.
- Place chicken on a baking sheet and bake for 35-40 minutes until golden brown.
- In a bowl, combine cabbage, carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper to make coleslaw.
- Serve the chicken hot with coleslaw on the side.
Notes
- For extra crunch, use panko breadcrumbs.
- Let the coleslaw sit for 30 minutes before serving for better flavor.
