- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- Fresh parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Boil the baby potatoes in salted water until tender, about 15 minutes.
- Drain the potatoes and let them cool slightly.
- Place the potatoes on a baking sheet and smash each one with the bottom of a glass.
- Drizzle olive oil over the smashed potatoes.
- Sprinkle garlic powder, salt, black pepper, and paprika on top.
- Bake for 25-30 minutes until crispy and golden.
- Garnish with fresh parsley before serving.
