Description
A creamy and hearty potato soup inspired by Outback Steakhouse.
Ingredients

- 4 large russet potatoes, peeled and diced
- 1 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- Salt and pepper to taste
- Chives for garnish
Instructions
- In a large pot, combine diced potatoes, onion, celery, and carrots.
- Add chicken broth and bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Use a potato masher to mash some of the potatoes for a thicker texture.
- Stir in heavy cream, cheese, and bacon.
- Season with salt and pepper.
- Serve hot, garnished with chives.
Notes
- For a vegetarian version, use vegetable broth.
- Adjust the thickness by adding more or less cream.
- Store leftovers in the fridge for up to three days.
