Ingredients

- 1 pork loin roast (3–4 pounds)
- 1 cup fresh cranberries
- 1 cup orange juice
- 1/2 cup brown sugar
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- Salt and pepper to taste
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix orange juice, cranberries, brown sugar, olive oil, garlic powder, salt, pepper, and rosemary.
- Place the pork loin in a roasting pan.
- Pour the cranberry-orange mixture over the pork loin.
- Cover the pan with aluminum foil.
- Bake for 1 hour, then remove the foil and bake for an additional 30 minutes or until the pork reaches an internal temperature of 145°F (63°C).
- Let the roast rest for 10 minutes before slicing.
- Serve with the cranberry sauce from the pan.
Notes
- Adjust cooking time based on the weight of the pork loin.
- For a richer flavor, marinate the pork loin overnight.
- You can substitute dried cranberries if fresh ones are unavailable.
