Description

One skillet salmon with lemon orzo is a simple and delicious meal that combines tender salmon fillets with flavorful lemon-infused orzo pasta, all cooked in one pan.


Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season salmon fillets with salt and pepper.
  3. Add salmon to the skillet and cook for 4-5 minutes on each side until cooked through.
  4. Remove salmon and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute.
  6. Add orzo and stir for 2 minutes.
  7. Pour in vegetable broth and lemon juice. Bring to a boil.
  8. Reduce heat and simmer for 10-12 minutes until orzo is tender.
  9. Stir in lemon zest and season with salt and pepper.
  10. Return salmon to the skillet. Garnish with parsley before serving.
