Description
A delicious one pot recipe combining spinach and artichokes with pasta.
Ingredients

- 8 ounces pasta
- 2 cups fresh spinach
- 1 can artichoke hearts, drained and chopped
- 2 cups vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, combine pasta, vegetable broth, and garlic.
- Bring to a boil and cook for 10 minutes.
- Add spinach and artichokes, stir well.
- Pour in the heavy cream and cook for another 5 minutes.
- Stir in Parmesan cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot.

- Use any pasta shape you prefer.
- Leftovers can be stored in the fridge for up to 3 days.
