Description

A delicious one pot recipe combining spinach and artichokes with pasta.


Ingredients

  • 8 ounces pasta
  • 2 cups fresh spinach
  • 1 can artichoke hearts, drained and chopped
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, combine pasta, vegetable broth, and garlic.
  2. Bring to a boil and cook for 10 minutes.
  3. Add spinach and artichokes, stir well.
  4. Pour in the heavy cream and cook for another 5 minutes.
  5. Stir in Parmesan cheese until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot.
