Ingredients

  • 12 oz pasta
  • 4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add bell pepper and cherry tomatoes, cook for 3 minutes.
  4. Pour in vegetable broth and add pasta.
  5. Stir in Italian seasoning, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover.
  7. Cook for 10-12 minutes or until pasta is al dente.
  8. Stir well and let sit for a few minutes before serving.
  9. Garnish with fresh basil.
