A simple and quick one pot pasta recipe.
Ingredients

- 12 oz pasta
- 4 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 bell pepper, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh basil for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add bell pepper and cherry tomatoes, cook for 3 minutes.
- Pour in vegetable broth and add pasta.
- Stir in Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Cook for 10-12 minutes or until pasta is al dente.
- Stir well and let sit for a few minutes before serving.
- Garnish with fresh basil.

- Use any pasta type you like.
- Add vegetables of your choice.
- Can be made vegan by ensuring broth is plant-based.
