A flavorful one pot Mexican rice casserole that’s easy to prepare and perfect for a family meal.
Ingredients

- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 tablespoon taco seasoning
- 1 cup vegetable broth
- 1 cup bell pepper, diced
- 1/2 cup onion, diced
- 2 cloves garlic, minced
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, sauté the onion and garlic until fragrant.
- Add the bell pepper and cook for another 2 minutes.
- Stir in the cooked rice, black beans, corn, diced tomatoes, and taco seasoning.
- Pour in the vegetable broth and mix well.
- Top with shredded cheese.
- Cover and bake for 20 minutes.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
- Adjust spices according to your taste.
- Can be stored in the refrigerator for up to 3 days.
- Feel free to add cooked chicken or beef for extra protein.
