Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 tablespoon taco seasoning
  • 1 cup vegetable broth
  • 1 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, sauté the onion and garlic until fragrant.
  3. Add the bell pepper and cook for another 2 minutes.
  4. Stir in the cooked rice, black beans, corn, diced tomatoes, and taco seasoning.
  5. Pour in the vegetable broth and mix well.
  6. Top with shredded cheese.
  7. Cover and bake for 20 minutes.
  8. Remove from the oven and let it cool for a few minutes before serving.
