A simple one pot Mexican rice casserole that is packed with flavor.
Ingredients

- 1 cup long-grain rice
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- In a large pot, combine rice and vegetable broth.
- Add black beans, corn, diced tomatoes, chili powder, and cumin.
- Stir to combine and bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes.
- Remove from heat and let it sit for 5 minutes.
- Stir in shredded cheese and season with salt and pepper.
Notes
- You can add cooked chicken or beef for extra protein.
- Top with avocado or cilantro for garnish.
- This dish can be made ahead and reheated.
