Description

This one-pot lasagna soup combines the flavors of traditional lasagna in a comforting soup.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 12 lasagna noodles, broken into pieces
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and garlic; cook until softened.
  3. Stir in the crushed tomatoes, beef broth, lasagna noodles, oregano, basil, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in ricotta cheese until well combined.
  6. Serve hot, topped with mozzarella cheese.
