Ingredients

  • 4 cups chicken broth

Instructions

  1. Rinse the quinoa under cold water.
  2. In a large pot, melt the garlic butter over medium heat.
  3. Add the chicken breasts and season with salt, pepper, and paprika. Cook until browned.
  4. Remove the chicken and set aside.
  5. Add the quinoa to the pot and stir for 1 minute.
  6. Pour in the chicken broth and bring to a boil.
  7. Return the chicken to the pot, cover, and reduce heat to low.
  8. Cook for 20 minutes or until quinoa is fluffy and chicken is cooked through.
  9. Garnish with chopped parsley before serving.
